Baked Whole Apples with Oatmeal…Plus Gluten Free

Apples remind me of Fall…My mom use to make us baked apples (on the stove)  all the time growing up for dinner and I have always loved them.

I had this idea  but couldn’t quite find the right recipe so I made this up and I think they turned out great . These would be a great side for Thanksgiving and the best thing is you could make them the day before and then cook the day of….

Do you have any Thanksgiving must haves? Leave us a comment and let us know!

National Smores Day!

Did you know that today is National Smores Day?
I didn’t either until I saw a post over at Celebrations at Home.
We are at the beach and have been making a lot of smores lately.
My daughter Lily actually spotted these
Jumbo Marshmellows at Target the other day.
They are so much fun!
They’re huge and they make the best smores.

Sloppy Joes!

Need an easy idea for dinner?  How about Sloppy Joes!  You can buy seasoning organic, use turkey instead of beef, add two sides of veggies and voile….an easy, yummy low fat dinner 😉

Southern Summer Side: SUCCOTASH

This is a great side dish for dinner.
It pairs perfect with rice, gravy, chicken or pork chops.

2 c. fresh or frozen corn (cooked)
2 c. lima or shell beans (cooked)
1/4 tsp. salt
1/4 tsp. pepper
2 tablespoons butter
1/4 cup whipping cream

Heat Corn and Lima Beans.
Season with salt and pepper, butter and cream.
All Done!  Yummy!

Summer Dessert: Grilled Peaches!

This is so easy and so yummy!  My hubby loved them.
Get some summer peaches.  Cut in half and pit.  Sprinkle some cinnamon, nutmeg and a little sea salt on them and pop them on the grill until they are soft.
I used my new Grill Pan that I am a huge fan of because I don’t have to be outside in the 120 degrees heat all summer and can still get the same effect as my grill.
You could add some ice cream to your peaches too!

Turkey Meatloaf…

Oh My Gosh!
I am bored with cooking dinner and
I am bored with this extra post baby weight…
A friend told me about this Feta Turkey Meatloaf she saw on the Food Network by Giada and it sounded great so I checked it out!

It was easy and fantastic and the best thing “The Kids Will Eat It!”
It is now a staple in the household.
I modified mine…

Sweet Buns ;)

I have been craving cinnamon buns for a bit and decided to make some of my own and I thought I would share.  I got the recipe here!

Recipe calls put put all ingredients in a bread machine just to rise but you don’t have to do this.  An alternative is just to knead your dough really well and place in the oven.  Here some great tips on how to get dough to rise.

Ingredients.
Busted out my bread machine I got 9 years ago for a wedding present.
Risen dough.
Greased my Emile Henry Ruffled Pie Dishes from Williams and Sonoma.
Rolled out the dough.
Filled center with the butter, cinnamon and brown sugar mixture.
Rolled on two fingers into buns.
Placed in pie dish and baked.

Iced and Served!

On a side note.  I made my icing differently. I just used 1 cup of powered sugar and 6 Teaspoons of milk to make the icing.  I was out of cream cheese and seemed a little lighter…as if it matters! *wink*

Happy Baking!
